Cooking is one of my favorite things to do. It’s a time during the day that I can spend by myself, it’s a time of relaxation and a moment in the day that I’m able to relieve stress and wind down. My fiance and I both work from home, so it’s hard to find a place in the house that doesn’t remind me of work. The kitchen is my sanctuary. Although I love to make extravagant meals, I don’t always have the time or patience. If I can’t think of anything to cook or want something I know everybody will love, my go to meal is anything Mexican food. It’s my favorite because everything is so simple to make and Mexican Food is my favorite – I might be obsessed.

I’m kind of embarrassed to say this, but I think I can eat my weight in chips and salsa so every time Mexican food is served at my house, you will find chips and salsa. I have a quick and easy recipe for salsa that is so much better than any salsa you will ever buy at the grocery store. Trust me, I’m a salsa connoisseur.

5 Minute Hot Salsa Recipe


  • 1 10oz can of of original Rotel (I chose the spicy, instead of the regular)
  • 1/2 small onion, chopped
  • 1 small clove garlic, smashed
  • 1 teaspoon honey
  • 1/4 teaspoon ground cumin
  • 1 14 oz can diced tomato
  • 1/2 teaspoon salt
  • 1/2 jalepeno
  • medium size handful of cilantro
  • juice of 1 lime


Put all ingredients in the base of a blender and  pulse. You should only have to pulse for about 30 seconds for all the ingredients to become finely chopped and mixed together. You can pulse more or less depending on the consistency you want your salsa. Be sure to taste and add seasoning, as needed.

That’s it! It only takes about 5 minutes or less. I usually double up on the recipe so I can eat it throughout the week. I love this salsa so much I am submitting it to the Lay’s “Do Us a Flavor” contest.  The contest invites fans nationwide to submit their ideas for the next great Lay’s potato chip flavor for the chance to win a $1 million grand prize. A judging panel made up of chefs, foodies and flavor experts will narrow down the contest submissions to four finalist flavors. The four finalist flavors will then be fully developed by Frito-Lay’s culinary experts and unveiled in summer 2014 and sold nationwide. From there, it will be up to fans to vote for the finalist flavor they want to see stay on store shelves, and the finalist behind the winning flavor will take home the million dollar grand prize. (See Rules for contest.) The contest ends April 5th, so submit your ideas asap!

    Honey? That’s interesting. I always forget to buy salsa at the store but I’m good about veggies! I’ll have to get the rest of the ingredients next time I go grocery shopping so I won’t have that problem.

      You don’t have to add the jalapenos, I like mine with a little bit of a kick. This is my favorite type of salsa because it doesn’t taste like straight tomato sauce!
