Baked Brie with Fresh Berries

Have you ever tried a recipe and it was so good you can’t stop thinking about it? I have another one to add to your list – Baked Brie with Fresh Berries. I’m a big cheese person, I’ll eat all sorts of cheese all day and night. It’s one of my favorites and honestly I have to watch my self because I can over do it. One cheese I didn’t become familiar with until a few years ago was Brie. It’s a soft cheese that can be eaten in so many ways – jazzed up or eaten by itself. No matter what it’s always full of flavor and so good. 

Over the last couple years, brie dressed in a puff pastry has become so popular. The breaded texture with the cheese was the perfect combination. For our recipe today, we are going to use a sourdough to house the brie and you’ll love the final recipe.

Baked Brie with Fresh Berries Recipe

INGREDIENTS
 
  • 1 (8 ounce) brie round
  • 1 round loaf crusty sourdough
  • 1 cup Blackberry compote
  • 1/2 cup candied spiced walnuts
  • 5-6 fresh blackberries
 
For The Spicy Walnuts
  • 1 cup chopped walnuts
  • ½ tbsp. unsalted butter, melted and cooled
  • 1 ½ tbsp. light brown sugar
  • 2 tsp. pure maple syrup
  • ¼ tsp. ground cinnamon
  • ¾ tsp. kosher salt
  • ¼ tsp. cayenne pepper
For The Blackberry Compote:
  • 2 cups blackberries, plus more for garnish
  • 1 tbsp. lemon juice, freshly squeezed
  • 1 tbsp. maple syrup
  • 1 tsp. vanilla extract
  • 1/4 cup brown sugar
  • 1 tbsp. corn starch
Directions:
 
Spicy candied walnuts
  1. Pre-heat the oven to 350 F degrees.
  2. Line a baking sheet with parchment paper.
  3. Mix together the butter, cane sugar, maple syrup, cinnamon, salt, and cayenne pepper in a bowl.
  4. Place the walnuts into the mixture.
  5. Toss to make sure that they are evenly coated.
  6. Spread them on the baking sheet on a single layer and place in the oven.
  7. Bake for 10 minutes, stirring every 3-4 minutes.
  8. Remove from the oven and let it cool.
Blackberries:
  1. In a medium saucepan, heat the blackberries, lemon juice, maple syrup, brown sugar, and vanilla in medium heat, stirring regularly. 
  2. As liquid begins to release from the berries, turn the heat up to medium.
  3. Add your corn starch and stir to combine.
  4. Cook, stirring periodically, until it is reduced and the liquid is syrupy.
Putting it all together:
  1. Preheat the oven to 450 degrees F,
  2. Using a sharp serrated knife slice the rounded top part of the bread off creating a lid.
  3. Set aside.
  4. Measure the circumference of the brie on the bread and carefully cut out a circle the same size. 
  5. Make sure to not go through the base of the bread.
  6. Using your hands pull out the bread from the center where the cheese will be placed.
  7. Using a sharp knife take off some of the top layer of the brie.
  8. Remove the top layer, and sides.
  9. Place the cheese into the sour dough bowl.
  10. Place on the a baking tray covered with parchment paper.
  11. Bake for 15 minutes.
  12. Top with your candied nuts and blackberry compote.
  13. Serve at once with crackers, bale chips, and crusty bread

Take your brie to the next level by adding fresh berries and nuts. This one is a crowd pleaser!

I know this year has dragged on and on for many pe I know this year has dragged on and on for many people but it has flown by to me. I'm 100% sure it has something to do with welcoming Myles into this world during the height of a pandemic and keeping a toddler alive at the same time.  I can't wait for Christmas morning to make memories with my little family (even though Christmas shopping isn't complete and I haven't even thought about wrapping presents). It will all fall in to place, it always does. We didn't attend our favorite Christmas events this year or get pictures with Santa so this random Santa picture will do and I'm 100% happy with it.  If this year has taught you anything,  let it be finding the joy in the little things ❤
The holidays are quickly approaching! 🎄 Althoug The holidays are quickly approaching! 🎄 Although things might be a bit different this season, we're still enjoying some of our favorite foods and traditions. This year we're incorporating ordering family meal kits from @chuysrestaurant for not only my family but extended family that we might not be able to hang with this holiday. Family pictures are always so much fun.... this ye Family pictures are always so much fun.... this year we got to attempt it twice thanks to sweet Bryce.  Thankfully the second time around he cooperated. As painful as they may be,  I'm so glad we get these done every year. I love looking back at them and see how much we've all changed and how much the kids have grown!

Your child gets to fully immerse themselves into role playing any job they can imagine. From checking animals at the veterinarian, putting out fires as a firefighter,  flying planes in an simulator, creating their own personal logo with Bic, or being a weatherman at WFAA - the options are endless! Kidzania activities are for ages 4 and up.

We felt very comfortable inside with their safety protocols. Temperatures were checked before entering.  Everybody ages 4 and up must wear a mask.  Hand sanitizer was readily available throughout the entire space.  If you're looking for a fun outlet for your child to explore, check it out!
