Have you ever tried a recipe and it was so good you can’t stop thinking about it? I have another one to add to your list – Baked Brie with Fresh Berries. I’m a big cheese person, I’ll eat all sorts of cheese all day and night. It’s one of my favorites and honestly I have to watch my self because I can over do it. One cheese I didn’t become familiar with until a few years ago was Brie. It’s a soft cheese that can be eaten in so many ways – jazzed up or eaten by itself. No matter what it’s always full of flavor and so good.
Over the last couple years, brie dressed in a puff pastry has become so popular. The breaded texture with the cheese was the perfect combination. For our recipe today, we are going to use a sourdough to house the brie and you’ll love the final recipe.
Baked Brie with Fresh Berries Recipe
- 1 (8 ounce) brie round
- 1 round loaf crusty sourdough
- 1 cup Blackberry compote
- 1/2 cup candied spiced walnuts
- 5-6 fresh blackberries
- 1 cup chopped walnuts
- ½ tbsp. unsalted butter, melted and cooled
- 1 ½ tbsp. light brown sugar
- 2 tsp. pure maple syrup
- ¼ tsp. ground cinnamon
- ¾ tsp. kosher salt
- ¼ tsp. cayenne pepper
- 2 cups blackberries, plus more for garnish
- 1 tbsp. lemon juice, freshly squeezed
- 1 tbsp. maple syrup
- 1 tsp. vanilla extract
- 1/4 cup brown sugar
- 1 tbsp. corn starch
- Pre-heat the oven to 350 F degrees.
- Line a baking sheet with parchment paper.
- Mix together the butter, cane sugar, maple syrup, cinnamon, salt, and cayenne pepper in a bowl.
- Place the walnuts into the mixture.
- Toss to make sure that they are evenly coated.
- Spread them on the baking sheet on a single layer and place in the oven.
- Bake for 10 minutes, stirring every 3-4 minutes.
- Remove from the oven and let it cool.
- In a medium saucepan, heat the blackberries, lemon juice, maple syrup, brown sugar, and vanilla in medium heat, stirring regularly.
- As liquid begins to release from the berries, turn the heat up to medium.
- Add your corn starch and stir to combine.
- Cook, stirring periodically, until it is reduced and the liquid is syrupy.
- Preheat the oven to 450 degrees F,
- Using a sharp serrated knife slice the rounded top part of the bread off creating a lid.
- Set aside.
- Measure the circumference of the brie on the bread and carefully cut out a circle the same size.
- Make sure to not go through the base of the bread.
- Using your hands pull out the bread from the center where the cheese will be placed.
- Using a sharp knife take off some of the top layer of the brie.
- Remove the top layer, and sides.
- Place the cheese into the sour dough bowl.
- Place on the a baking tray covered with parchment paper.
- Bake for 15 minutes.
- Top with your candied nuts and blackberry compote.
- Serve at once with crackers, bale chips, and crusty bread
