Chocolate Chile Bohemia Ice Cream Recipe

To celebrate National Chocolate Ice Cream Day (no, I’m not kidding), we’re sharing a delicious recipe to celebrate America’s favorite ice cream flavor.

Who doesn’t love Mexican foods and spices? This recipe for Chocolate Chile Bohemia Ice Cream incorporates spices and flavors of Mexican cuisine and one of the Mexico’s most sophisticated beers: Bohemia. You will be surprised how well chocolate and chili pepper combine.  In this case, pasilla chili gives the recipe a subtle heat, and to enhance the flavor complexity add beer to the mix to get one of the most exciting and delicious chocolate ice creams that you will ever have.

Chocolate Chile Bohemia Ice Cream Recipe

This recipe combines chocolate with chili pepper and almost wine-like taste of upscale Mexican beer Bohemia.  Cold to the touch and sweet to the tongue, each bite is sure to inspire.

Makes 1 quart

Ingredients:

  • 1 large pasilla negro chile, stemmed, seeded, deveined
  • 1 1/3 cups half-and-half
  • 2 ounces Mexican chocolate, chopped into small pieces
  • 3 ounces semi-sweet chocolate, chopped into ¼-inch pieces
  • 4 egg yolks
  • ½ cup sugar
  • 1 1/3  cups heavy (whipping) cream
  • 1 ½ teaspoon pure vanilla, preferably Mexican
  • ¼ cup Bohemia Beer

Instructions:

  1. In a small skillet heated over medium, toast the chile, pressing it flat against the skillet with a metal spatula until it is very aromatic—about 10 seconds per side. Place in a small saucepan, add the half-and-half, Mexican chocolate and the semi-sweet chocolate, and heat over medium until steaming (but not boiling). Remove from heat. Cover and let steep for 10 minutes, then pour into a blender jar and process until the chile is completely pureed.
  2. Set up a 4-quart saucepan, filled halfway with water, into which you can nestle a 3-quart stainless steel bowl. Bring the pot of water to a boil over high heat while you’re preparing the custard base. Reduce the temperature under the pot of boiling water to maintain a gentle simmer.
  3. In the 3-quart stainless steel bowl, whisk together the egg yolks and sugar until thoroughly combined, then whisk in the chile-infused chocolate mixture. Set the bowl of custard base over the simmering water and whisk frequently, scraping down the sides of the bowl regularly with a rubber spatula, until the mixture thickens noticeably, about 5 minutes. The custard is sufficiently cooked when it reaches 180 degrees on an instant-read thermometer. (You can also test it by dipping a wooden spoon into the custard, then running your finger through the custard: if the line holds clearly, the custard has thickened sufficiently.) For the finest texture, strain the mixture through a fine sieve into a clean bowl.
  4. Fill a large bowl halfway with ice. Nestle the bowl of strained custard in the ice bath. Whisk the mixture until it is completely cool. Refrigerate if not using immediately.
  5. Stir the heavy cream, vanilla and Bohemia into the base. Freeze in an ice cream freezer according to the manufacturer’s directions. Scrape into a freezer container and freeze for several hours to firm.

I know this year has dragged on and on for many pe I know this year has dragged on and on for many people but it has flown by to me. I'm 100% sure it has something to do with welcoming Myles into this world during the height of a pandemic and keeping a toddler alive at the same time.  I can't wait for Christmas morning to make memories with my little family (even though Christmas shopping isn't complete and I haven't even thought about wrapping presents). It will all fall in to place, it always does. We didn't attend our favorite Christmas events this year or get pictures with Santa so this random Santa picture will do and I'm 100% happy with it. Thankfully the second time around he cooperated. As painful as they may be,  I'm so glad we get these done every year. I love looking back at them and see how much we've all changed and how much the kids have grown!

Your child gets to fully immerse themselves into role playing any job they can imagine. From checking animals at the veterinarian, putting out fires as a firefighter,  flying planes in an simulator, creating their own personal logo with Bic, or being a weatherman at WFAA - the options are endless! Kidzania activities are for ages 4 and up.

We felt very comfortable inside with their safety protocols. Temperatures were checked before entering.  Everybody ages 4 and up must wear a mask.  Hand sanitizer was readily available throughout the entire space.  If you're looking for a fun outlet for your child to explore, check it out!
