For a little while, I was obsessed with my crock pot. I would make 4 meals a night in it. No matter what I made, it turned out so good. One reason (of many) that I love it so much is because I can throw everything in the crock pot first thing in the morning then go about my day and forget about it. After a long day, I could enter my kitchen and dinner was complete without me having to cook over a stove.
The Crockpot has always been one of the best purchases I ever made. I have a few different sized crockpots so I can have multiple things cooking. It’s great to have more than one especially for parties and get togethers. My one tip to using a crock pot is to purchase the plastic liners and use them. You can find them at the grocery store next to the foil and saran wrap. They make cleaning the crockpot a complete breeze especially if you’re using it multiple times a week. One of our favorite meals is bean soup with ham. This meal is very hearty and makes great left overs. Usually my husband will throw the leftovers in a tortilla and make himself a burrito the next day. If you’re looking for a simple soup that will keep you full all night, this is the meal for you.
Crockpot Ham Bone and Bean Soup
Ingredients:
- 1 yellow onion peeled and chopped
- 2 cups baby carrots
- 1 ham bone with meat on
- 1 20 oz bag dried 15 bean soup mix
- 8 cups low sodium chicken broth
- 2 tbsp. minced garlic
- 2 tbsp. of cajun seasoning
- 3 cups diced ham
- 1 15 oz can diced fire roasted tomatoes undrained
- salt and pepper to taste
Crockpot Ham Bone and Bean Soup
- 1 yellow onion peeled and chopped
- 2 cups baby carrots
- 1 ham bone with meat on
- 1 20 oz bag dried 15 bean soup mix
- 8 cups low sodium chicken broth
- 2 tbsp. minced garlic
- 2 tbsp. of cajun seasoning
- 3 cups diced ham
- 1 15 oz can diced fire roasted tomatoes undrained
- salt and pepper to taste
- Rinse the beans thoroughly; and leave in a bowl to soak for 2 hours.
- Set aside the seasoning packet for later use.
- Prepare your crock pot and wiping clean and turning on to HIGH
- Place the onion, carrot, ham bone, ham chunks, beans, chicken broth, cajun spice and garlic in a slow cooker.
- Cook on HIGH for 4 hours or LOW for 8 hours, or until beans are done.
- At the half way point remove the ham bone from the slow cooker.
- Stir in the tomatoes, seasoning packet and salt and pepper to taste.
- Cover and cook for the rest of the time.
- Sprinkle with parsley and serve
