I have a confession. I’m obsessed with homemade chocolate chip cookies in a mug.
Last year, my husband and I were getting ready to go to bed when we both had a bad sweet tooth. We wanted a cookie or something sweet but we didn’t have anything. After doing a little research, I found a recipe to make one cookie in a mug. It used a handful of ingredients that you keep stocked in your pantry. After making it once, I was completely sold. It quickly became my new favorite treat. Instead of making a batch of cookies that my husband and I would destroy in a day, I was now able to make the perfect portion without feeling guilty. (Not to mention it only takes 2 minutes to make)
Throughout the past year, I have been tweaking the recipe to make it the best it can be. I am now at a point that I love it just the way it is and enjoy the sweet treat every time we make it.
Homemade Cookie in a Mug Recipe
Ingredients
- 1/4 cup flour
- 1 tablespoon brown sugar
- 1 egg yolk
- 1 tablespoon unsalted butter
- pinch of salt
- 1/2 packet of Pure Via Stevia
- 1 tablespoon chocolate chips
Directions
- Measure out all ingredients
- Melt butter
- Mix brown sugar, salt, stevia and yolk with the butter
- Mix together the flour and chocolate chips with the sugar mixture
- Microwave for 1 minute
- Enjoy
How easy is that recipe? Part of my tweaking of the recipe included getting rid of granulated sugar and substituting Pure Via Stevia. Instead of almost half a cup of sugar, I only had to add HALF a packet of Pure Via. To be honest, I could have only used 1/4 of the packet but I like my sweets extra sweet. If you’re unfamiliar with Pure Via, it’s definitely something you need to look into. Pure Via is an all natural, non GMO, zero calorie sweetener. We’ve added it to our diet and slowly have stopped using sugar. My husband loves to use it in his coffee each morning and I’ve started using it in our every day recipes.
