Mexican Pasta Salad

If you’re looking for an easy, impressive dish to make you’ve got to try this Mexican Pasta salad dish. It’s very easy to make, requires little prep and won’t cost you an arm and leg to make. I’ve always used this as a side dish or an appetizer to take over to a friend’s house but you can easily make this into a main dish by adding some ground meat or chicken! The whole dish can be transformed by adding meat. 

I love this dish because I usually already have all the ingredients readily available. It’s full of flavor and every time I make it there is absolutely none left which means people like it. Let’s make the Mexican Pasta Salad.

Ingredients

  • 1 box of bow tie pasta
  • 1 can of corn, drained
  • 1 can of black beans, drained
  • 1 Green Bell Pepper, chopped
  • 1 tomato, chopped
  • 1/2 of a yellow onion, chopped
  • 1/4 C of cilantro, chopped
  • 1 small container of Feta cheese
  • 1 orange pepper for topping 
  • 1 red pepper for topping
  • 1 large bowl
  • 1 medium bowl
  • 1 large pot to cook the pasta

Dressing ingredients

  • 1 C plain greek yogurt
  • 1 tbsp lime juice
  • 1/2 tsp honey
  • 1/2 tsp cumin
  • 1/2 tsp paprika

Dressing Directions

  1. In a medium bowl, combine all ingredients and mix with a whisk
  2. Set aside in the fridge till your pasta is ready

Pasta Directions

  1. Add water to your pot and bring to a boil
  2. Once water is boiling, add in pasta and cook until done
  3. While pasta is cooking, drain the corn and black beans.
  4. Chop your green pepper, tomato, onion and cilantro set aside
  5. Once the pasta is cooked, drain the water and add pasta to a large mixing bowl
  6. Let the pasta cool for a few minutes, mixing occasionally so that the pasta doesn’t become sticky and hard
  7. Once pasta is cooled, add in your corn, black beans, green pepper, tomato, onion, cilantro
  8. Add in the dressing and mix
  9. Mix in the Feta cheese
  10. Top with some more Feta cheese and cilantro and add some orange and red pepper slices for presentation

I know this year has dragged on and on for many pe I know this year has dragged on and on for many people but it has flown by to me. I'm 100% sure it has something to do with welcoming Myles into this world during the height of a pandemic and keeping a toddler alive at the same time.  I can't wait for Christmas morning to make memories with my little family (even though Christmas shopping isn't complete and I haven't even thought about wrapping presents). It will all fall in to place, it always does. We didn't attend our favorite Christmas events this year or get pictures with Santa so this random Santa picture will do and I'm 100% happy with it.  If this year has taught you anything,  let it be finding the joy in the little things ❤
The holidays are quickly approaching! 🎄 Althoug The holidays are quickly approaching! 🎄 Although things might be a bit different this season, we're still enjoying some of our favorite foods and traditions. This year we're incorporating ordering family meal kits from @chuysrestaurant for not only my family but extended family that we might not be able to hang with this holiday. Family pictures are always so much fun.... this ye Family pictures are always so much fun.... this year we got to attempt it twice thanks to sweet Bryce.  Thankfully the second time around he cooperated. As painful as they may be,  I'm so glad we get these done every year. I love looking back at them and see how much we've all changed and how much the kids have grown!

Your child gets to fully immerse themselves into role playing any job they can imagine. From checking animals at the veterinarian, putting out fires as a firefighter,  flying planes in an simulator, creating their own personal logo with Bic, or being a weatherman at WFAA - the options are endless! Kidzania activities are for ages 4 and up.

We felt very comfortable inside with their safety protocols. Temperatures were checked before entering.  Everybody ages 4 and up must wear a mask.  Hand sanitizer was readily available throughout the entire space.  If you're looking for a fun outlet for your child to explore, check it out!
