When we’re needing a simple recipe to make for dinner, I like to make Mexican Pizzas. Of course, you can always make regular pizza but what’s the fun in that? Add some Mexican flair to your pizza with cilantro, peppers and enchilada sauce. If you want to get your whole family involved, this is the perfect recipe. Let everybody have their own dough and let them make their own small pizza however they want.

Mexican Pizza Recipe
Ingredients
- 1 package of small Boboli pizza (3 pack)
- 1 can of black beans, drained
- 1 can of corn, drained
- 1 onion, chopped
- 1 tomato, chopped
- 1 green bell pepper, chopped
- 1 can of refried beans
- 2 chicken breasts, cooked and shredded
- 1 bag of shredded Mexican cheese
- parchment paper
- cookie sheet
- skillet to cook your chicken
- sour cream
- green chile enchilada sauce
Directions
- Preheat your oven to 350 degrees
- Place parchment paper onto your cookie sheet and set aside
- Place the skillet on the stove over medium heat and place your chicken on
- Cook to your desired liking
- Set aside to cool once finished cooking
- Prepare your veggies
- Chop up your onion to small pieces, not finely chopped
- Chop your tomato to small pieces
- Chop your green pepper to small pieces
- Drain the corn and the black beans
- Shred your chicken and set aside
Preparing the pizza
- Place your 3 Boboli pizza’s onto the parchment paper
- Spoon some refried beans onto the pizza and spread it like you would with pizza sauce
- Add some shredded chicken
- Sprinkle a little bit of black beans and corn
- Sprinkle some cheese, onions, green pepper and tomatoes
- Put into the oven for 5-10 minutes until the cheese is melted
- Set aside to cool for a few minutes
- Drizzle sour cream and green chile sauce
This recipe is perfect to tweak and make your own. I like to add extra jalapenos and cilantro to my Mexican pizza while my husband likes extra meat. This recipe is a win / win because everybody will get exactly what they want.
