It’s the most wonderful time of the year – for many reasons and one is all the delicious recipes we make in December. With a toddler in tow, we’ve been cooking more sweet treats than I care to admit. These Monster Christmas Cookie Bars are perfect to snack on or to take to the neighbors. They’re sweet and are full of flavor – a real treat for everybody!
Monster Cookie Christmas Bars
Christmas Bars made from scratch. These monster cookie bars are perfect to gift your neighbors or bring to the next holiday event!
Ingredients
- 1/2 C unsalted sweet cream butter, softened
- 1/2 C sugar
- 1 C packed light brown sugar, packed
- 1 C creamy peanut butter
- 2 large eggs
- 1 tsp pure vanilla extract
- 1/2 tsp salt
- 1/2 tsp baking soda
- 2 C flour
- 1 c quick-cooking oats
- 1 C semi-sweet chocolate chips
- 1 1/2 C mint M&M’S candies
- 2 8 oz cream cheese, softened
- 1/2 C sugar
- 4 oz semi-sweet chocolate chips, melted
- 2 large eggs
Instructions
- 1. Preheat oven to 350°F.
- Line your 9×13 baking dish with parchment paper.
- Using a standing mixer, beat the butter with sugars and peanut butter until creamy
- Add eggs and vanilla, beat again until combined.
- In a large bowl, mix together in salt, baking soda, flour, and oats and mix until well combined
- Gradually add into your wet ingredients
- Fold in 1/2 chocolate chips and 1 cup of M&M’S.
- Press half of the cookie dough into the bottom of the prepared baking dish and bake in the oven for 5 minutes.
- Set aside.
Cheesecake filling:
- In the standing mixer, beat cream cheese until soft and creamy.
- Add in sugar and beat until smooth.
- Add in melted chocolate and eggs and continue to mix until until eggs are fully incorporated,
- Spread cheesecake over first layer of cookie dough.
- Top with remaining cookie dough and sprinkle the remaining 1/2 cup candy over the top.
- Bake for 35 minutes.
- Remove from oven and allow to cool to room temperature then refrigerate overnight
- Cut into bars and enjoy with a glass of milk!
