One Pot Pastalaya Recipe

Every night the same question is asked in my house, “what’s for dinner?” I’ve learned over the past year that if I don’t have a plan for dinner, we will end up eating unhealthy food and contemplate for over an hour what in the world we are going to order. I love cooking at home and it kills me to eat out during the week when I know I am fully capable of whipping up a delicious meal in minutes.

What it all comes down to is preparation. If we know what we are eating each night, I can make sure our kitchen is stocked with the proper ingredients so we can cook whatever we please. I try my best to keep my kitchen fully stocked with staples items such as pasta, meat, cheese, bread, milk, eggs, etc because I know with those items I can make all sorts of meals.

We tend to eat the same meals every single week so I’m on a mission to change things up this year. My husband’s family is from Louisiana so we love to eat cajun food and dishes with lots of spices and flavor. We love jambalaya and I love pasta so we decided to make a twist and make Pastalaya. Pastalaya is a popular version of jambalaya made with pasta instead of rice. This is a great way to change up your weekly meals and add something new – the best part is it’s all made in one pot!

One Pot Pastalaya Recipe

One Pot Pastalaya Recipe

Ingredients:

  • 2 Tbsp oil
  • 1 1/2 lb. chicken, diced
  • 1 red bell pepper, diced
  • 1 onion, diced
  • 1 Lb. smoked sausage, sliced into rounds
  • 4 1/2 c. low sodium chicken broth
  • 1 1/2 c. tomato sauce
  • 1 can Rotel diced tomatoes with green chiles
  • 1 Tbsp. Cajun seasoning
  • 1 Tbsp. garlic powder
  • 1 Tbsp. paprika
  • 1 Tbsp. onion powder
  • 1 Lb. linguine
  • 1 Lb. pre cooked shrimp

Instructions

  1. In a large pot, heat oil over medium heat.
  2. Add chicken and cook until tender and to your liking.
  3. Add remaining ingredients except shrimp
  4. Bring to a boil, stirring often and cook for about 25 minutes or until noodles are cooked.
  5. Add in the shrimp and cook for an additional 15 minutes
  6. Serve and enjoy!

I love that this meal is super simple with ingredients that I keep handy in my kitchen. Not only is it full of flavor, it will make every person in your family happy.

I know this year has dragged on and on for many pe I know this year has dragged on and on for many people but it has flown by to me. I'm 100% sure it has something to do with welcoming Myles into this world during the height of a pandemic and keeping a toddler alive at the same time.  I can't wait for Christmas morning to make memories with my little family (even though Christmas shopping isn't complete and I haven't even thought about wrapping presents). It will all fall in to place, it always does. We didn't attend our favorite Christmas events this year or get pictures with Santa so this random Santa picture will do and I'm 100% happy with it.  If this year has taught you anything,  let it be finding the joy in the little things ❤

This year we're incorporating ordering family meal kits from @chuysrestaurant for not only my family but extended family that we might not be able to hang with this holiday. Family pictures are always so much fun.... this ye Family pictures are always so much fun.... this year we got to attempt it twice thanks to sweet Bryce.  Thankfully the second time around he cooperated. As painful as they may be,  I'm so glad we get these done every year. I love looking back at them and see how much we've all changed and how much the kids have grown!

Your child gets to fully immerse themselves into role playing any job they can imagine. From checking animals at the veterinarian, putting out fires as a firefighter,  flying planes in an simulator, creating their own personal logo with Bic, or being a weatherman at WFAA - the options are endless! Kidzania activities are for ages 4 and up.

We felt very comfortable inside with their safety protocols. Temperatures were checked before entering.  Everybody ages 4 and up must wear a mask.  Hand sanitizer was readily available throughout the entire space.  If you're looking for a fun outlet for your child to explore, check it out!
