St. Patrick’s Day Shamrock Mint Cookies

St Patricks Day used to be a day of partying and hanging out in Lower Greenville in Dallas but times have changed. Now I find myself baking up a storm and preparing delicious food to celebrate this holiday in March. We love mixing different flavors with cookies so adding chocolate and mint for these beauties are the perfect match. 

The base of this cookie is a brownie mix. If you would prefer, make the brownie portion from scratch. I personally love homemade brownies but when things get busy, it’s nice to be able to use packages that are prepared for you. 

Now, let’s get cooking!

St. Patricks Day Shamrock Mint Cookies

Makes 24 cookies

Ingredients

  • 1 9×13 triple brownie mix 
  • 3 tbsp flour 
  • 2 large eggs
  • 1/3 C canola 
  • 1 tsp mint extract 
  • 1 bag of Dove dark chocolate mint chocolates
  • 1 bag of the mint M&M’s 
  • 1 tube of green frosting 
  • 1 cookie sheet fitted with parchment paper
  • 1 disposable piping bag

Directions

  1. Preheat oven to 350 degrees
  2. In a large mixing bowl, combine the brownie mix and the flour
  3. Mix in the eggs, oil and mint extract until combined
  4. Using an ice cream scoop, scoop some of the batter onto the cookie sheet. You should be able to fit on about 12 cookies
  5. Bake in the oven for 8-12 minutes
  6. While the cookies are baking, unwrap your dove chocolate and set aside
  7. Once the cookies are baked, let them sit on the counter to cool for about a minute
  8. Place a dove chocolate onto the center of the cookie and lightly push down
  9. Allow the cookies to cool for about 30 minutes. The chocolate will start to melt and cover almost the top of the cookie
  10. While the chocolate is still melted, add 3 green M&M’s onto the top of the cookie to create a shamrock
  11. Add the a small amount of the green icing into the piping bag and cut the tip off
  12. Pipe a stem under the M&M’s
  13. Allow cookies to cool for another 30 minutes before enjoying with a large glass of milk or a large cup of coffee!

  • 1 bag of the mint M&M's
  • 1 tube of green frosting

I know this year has dragged on and on for many pe I know this year has dragged on and on for many people but it has flown by to me. I'm 100% sure it has something to do with welcoming Myles into this world during the height of a pandemic and keeping a toddler alive at the same time.  I can't wait for Christmas morning to make memories with my little family (even though Christmas shopping isn't complete and I haven't even thought about wrapping presents). It will all fall in to place, it always does. We didn't attend our favorite Christmas events this year or get pictures with Santa so this random Santa picture will do and I'm 100% happy with it.  If this year has taught you anything,  let it be finding the joy in the little things ❤
The holidays are quickly approaching! 🎄 Althoug The holidays are quickly approaching! 🎄 Although things might be a bit different this season, we're still enjoying some of our favorite foods and traditions. This year we're incorporating ordering family meal kits from @chuysrestaurant for not only my family but extended family that we might not be able to hang with this holiday. Family pictures are always so much fun.... this ye Family pictures are always so much fun.... this year we got to attempt it twice thanks to sweet Bryce.  Thankfully the second time around he cooperated. As painful as they may be,  I'm so glad we get these done every year. I love looking back at them and see how much we've all changed and how much the kids have grown!

Your child gets to fully immerse themselves into role playing any job they can imagine. From checking animals at the veterinarian, putting out fires as a firefighter,  flying planes in an simulator, creating their own personal logo with Bic, or being a weatherman at WFAA - the options are endless! Kidzania activities are for ages 4 and up.

We felt very comfortable inside with their safety protocols. Temperatures were checked before entering.  Everybody ages 4 and up must wear a mask.  Hand sanitizer was readily available throughout the entire space.  If you're looking for a fun outlet for your child to explore, check it out!
