Trix Bundt Cake Recipe

Making memories with my nieces and nephews is one of my favorite things to do. They are growing up so fast that it’s really scary. They are at good ages that they enjoy hanging out with me and I want to take advantage of that while they are still willing. This past week I got to hang out with 4 of my 8 nieces and nephews. It was is so much fun to learn about each personality and watch them grow before my eyes.

Since the kids love treats and I love to bake, it’s the perfect combination. I really had to scratch my brain to figure out what a 4 year old, 6 year old, 11 year old and 13 year old would all like. They all have such different tastes and are very opinionated so I had to really think this one through. Since I knew they were all obsessed with cereal, I knew that would have to be incorporated into the recipe.

While strolling through the aisles at Walmart, I had a light bulb moment. I remember seeing some amazing recipes on quericavida.com and my grand idea came to me –

Trix Bundt Cake. You might think I’m a bit crazy but it seemed like the perfect idea and ended up being perfect (and just what the kids wanted). What does that mean? Four happy bellies and one best aunt ever.

Do you know what I love about homemade cakes? They’re almost as easy as making one from a box and you know what ingredients are going into it. Not to mention, they taste way better and who doesn’t love being able to say it’s homemade? Trix Bundt Cake

Trix Vanilla Bundt Cake Recipe

Ingredients

  • 1 cup granulated sugar
  • 1/2 cup (1 stick) butter, softened
  • 2 teaspoons vanilla extract
  • 2 eggs, at room temperature
  • 1/4 teaspoon salt
  • 3/4 cup milk
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1.5 cups of Trix Cereal

Vanilla Glaze

  • 2 cups powdered (confectioners) sugar
  • 2 tablespoons milk
  • 1 teaspoon lemon juice
  • 1/2 teaspoon vanilla extract

Directions:

  1. Preheat oven to 350°F. Grease and flour Bundt pan.
  2. Beat granulated sugar, butter, and eggs in stand mixer at medium speed until well blended.
  3. Change speed to low and add milk and vanilla; change back to medium speed and mix well.
  4. Add flour, baking powder and salt; beat about 1 minute or until smooth.
  5. Pour into prepared pan.
  6. Bake 30 minutes or until toothpick inserted into center comes out clean.
  7. Gently loosen cake from pan with knife and turn out onto wire rack; cool completely.

Vanilla Glaze

  1. Put powder sugar, 2 tablespoons milk, lemon juice, and vanilla extract in medium bowl and mix until fully mixed. To make glaze more runny, add milk. You want the icing to be somewhat thick so it sticks well to the cake.

Once the icing had set but not completed cooled, I added all the Trix that I could. One by one, the cake started to come together just as I had imagined. I couldn’t wait to cut a piece and give it a try.Trix Bundt Cake

I have to share a quick story about what happened early in the night before the Trix Bundt Cake. My sister and brother in law had gone away for the weekend to celebrate a birthday and I was in charge of taking care of the kids for one day, feeding them and getting them back safely to the house.

So dinner time rolls around and since I’m feeding approximately 8 people that night (which is 6 more than I’m used to), I message my sister to see what she suggests for her kids for dinner. She tells me to just make them cereal and they would be more than happy. So, I ignore her because I feel like I need to make some big meal for everybody. I drag the kids to the store and pick up groceries to make spaghetti. I cook spaghetti and serve everyone their meal. Not even 5 minutes later, the youngest is telling me he doesn’t like my “sgetti.” So I ask him what he wants. Guess what he says? Cereal.

I guess my sister knew what she was talking about. After the kids see that the youngest has cereal, they all decide they want cereal too. Needless to say, I should have just listened to my sister and made everyone cereal because that’s all they really wanted.

The cake turned out absolutely perfect. It was the just the right amount of sweetness thanks to the Trix cereal. To be honest, this weekend wasn’t all about the Trix Bundt Cake, it was about making these sweet memories with my nieces and nephews. They are growing so quickly and I try to make as many memories as I can with them whether it be showing up to their school play or making sweets in the kitchen together. I cherish these moments and know they do too.
