Copycat Starbucks Lemon Loaf Recipe

How many times have you run out of the house in the morning and completely forgot to grab a bite to eat or in the middle of the day stop by a fast food joint for some fries or something quick to eat? This happens more often than I’d like to talk about. Since I’m always out of my house and on the go often, grabbing a snack always slips my mind. I’m not opposed to eating out but the cost adds up quickly when you do it all the time.

Since I’m trying to get better about eating more at home, I knew that the best way to stay on track was to keep treats and snacks readily available. One treat that I always love is the lemon loaf at Starbucks. It’s full of flavor and a great snack to fill me up when I’m running around. As much as I love it, the price is a bit steep for one slice of bread.

I love a good challenge so what’s a girl to do? Make a copycat version of the Starbucks Lemon Loaf! It’s so good and won’t cost you nearly as much as buying 1 slice at a time from Starbucks. Make this to have at your house for breakfast or a quick snack throughout the day. No matter when you eat it, you’re guaranteed to love it!

Copycat Starbucks Lemon Loaf Recipe

(makes (1) 11 x 9 loaf pan)

Ingredients

  • 1 1/2 c flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 3 large eggs, room temperature
  • 1 C sugar
  • 3 tbsp unsalted sweet cream butter
  • 1 tsp vanilla extract
  • 3 tsp lemon oil
  • 1 C lemon juice, from 2 lemons
  • 1/2 C lemon zest
  • 1/2 C oil

Directions for Loaf

  1. Preheat oven to 350
  2. In a medium bowl, combine the flour, baking soda and powder and salt and set aside
  3. In a standing mixer, combine the eggs, sugar, butter, lemon oil, lemon juice and lemon zest
  4. Mix until combined
  5. Slowly add in the flour and mix until fully incorporated
  6. Pour into loaf pan and bake for 40 minutes
  7. Once done, set aside to cool

Frosting ingredients

  • 1 C powder sugar
  • 1/2 C lemon juice
  • 1/4 C lemon zest

Directions for Icing

  1. In a medium bowl, combine all ingredients and mix
  2. Pull loaf out and set on a plate
  3. Pour glaze over the loaf and let sit to harden

Enjoy!
