Mexican Street Corn Dip
- 2 cans of corn
- 2 cans of black beans
- 1 avocado, peeled and chopped
- 1 green bell pepper, chopped
- 1 tomato, chopped
- 1/2 half onion, chopped
- In a large mixing bowl, combine the corn, black beans, avocado, bell pepper, tomato and onion
- Set aside to make dressing
- 1 C plain greek yogurt
- 1 tbsp lime juice
- 1/2 tsp honey
- 1/2 tsp cumin
- 1/2 tsp paprika
- In a medium bowl, combine all ingredients and mix with a whisk
- Combine dressing with the corn mixture and serve
