Homemade Sticky Buns

Blog· Food and Drinks

Since my husband and I work from home, I like to make a lot of snacks that we can both pick up and go throughout the day. I’ve learned the key to keeping us fed and happy is to always have easily accessible food. Some of our favorites include fruit cut in small pieces, string cheese, chips, or delicious desserts. I know the last one isn’t the healthiest but who doesn’t love a good sweet to get you through the day?
I often make homemade brownies because they are easy to make but I try to cut back so I’m not over indulging. I know it’s isn’t the best idea to replace brownies with another food that has the same amount of sugar but when my friend mentioned she was making Homemade Sticky Buns, I knew I had to have the recipe and give them a try.
Although this recipe does take a little time since you have to let the dough set, I love that it has lots of ingredients that are staples in my house. I highly suggest doubling this recipe and making a batch for you and one to give away. If you have neighbors or friends to share this with, I can assure you that they’ll love it!

Homemade Sticky Buns Recipe

Ingredients
Dough:
  • 1 1/3C Milk
  • 1 large egg plus 1 yolk
  • 3C bread flour
  • 1 package instant yeast
  • 1/2C sugar
  • 1/2C vegetable oil
  • 4 tablespoons granulated sugar
  • 2tsp kosher salt
  • 6 tbsp butter
Stickiness topping:
  • 6 tbsp butter melted
  • 1/2 cup packed brown sugar
  • 1/4 cup granulated sugar
  • 1/4 cup dark corn syrup
  • 1/4 tsp salt
  • 3 tbsp water
Cinnamon filling:
  • 1 cup packed brown sugar
  • 1 1/4 tsp ground cinnamon
  • 1/4 tsp salt
Directions
  1. In a stand mixer, mix milk, egg, yolk together.
  2. Slowly add flour and yeast.
  3. Change to dough hook and mix on low until combined.
  4. Let sit 20 minutes.
  5. Add sugar and salt and mix on low for 5 minutes, add butter and continue mixing for another 5 minutes.
  6. Move to lightly floured surface and knead to form a ball.
  7. Place in mixing bowl lightly sprayed with vegetable oil, spray the top to prevent drying out.
  8. Cover with plastic and draw outline of dough on plastic with a permanent marker to document rising process.
  9. Place in warm spot and let rise 40 min to 1 hour until doubled in size.
  10. While dough rises grease 9×13 baking pan.
  11. Combine brown sugar, granulated sugar, corn syrup, salt, melted butter and water together, pouring over entire 9×13 pan once combined.
  12. Combine brown sugar and cinnamon and salt in a bowl, set aside.
  13. Once dough has risen, turn out onto floured surface.
  14. Press to 18 x 16 rectangle, sprinkle filling over dough keeping 1inch border on bottom edge.
  15. Roll dough starting at the left top and rolling as you go towards the right side and towards you.
  16. Once completely rolled (not too tightly!) cut 12 equal portions.
  17. Place cut pieces in prepared baking dish, cover with plastic wrap and let rise a second time, another 40 min to 1 hour.
  18. Heat oven to 375 degrees.
  19. Bake buns about 20 min then cover with foil to prevent burning continuing to cook until an internal temp of 205 is reached (approximately 10 more minutes).
  20. Once done, let cool 5 min before inverting, serve immediately.
