No matter if it’s Fall or not, pumpkin is one of those ingredients that is always fun to add to your favorite recipes. Hummus is a staple in our family, we eat it often and love to experiment with different flavors. We’ve tried everything from spicy chile hummus to our favorite taco hummus.
Now that the weather is finally changing, we figured why not try Pumpkin Hummus? Hummus is so easy to make and adding pumpkin sounded like the perfect idea.
- 1 ½ tsp minced garlic
- 1 can chickpeas (15 oz)
- 1 ½ C pumpkin puree
- ½ tsp salt
- 1 tsp ground cumin
- 1 lemon, juiced
- 1 TBSP extra virgin olive oil
1. Using a food processor add your drained and rinsed chickpeas, pumpkin puree, salt,cumin, lemon juice, and extra virgin olive oil.
2. Process until completely blended.
3. Serve immediately or cover and store in the refrigerator.
