Cookies are one dessert that I love to eat year round. They are easy to make from scratch and the ingredients you can add are endless. Even though there are certain flavors like peppermint and pumpkin that many people only like to eat during certain times of the year, I love eating them year round. Why not have your favorite flavors throughout the whole year instead of just a couple months out of the year? 

One cookie that I have been obsessing over is my Peppermint Mocha Latte Cookies. They are so full of flavor, easy to make and I love the way they look once done cooking. 

They have a dark rich flavor but the peppermint flavor adds just the right amount of sweetness to the mix. 

Peppermint Mocha Latte Cookies

Peppermint Mocha Latte Cookies are full of flavor! They have the perfect mixture of mint and mocha.

Ingredients

• 1 c unsalted sweet cream butter, melted
• 2 c dark brown sugar
• 1 c white sugar
• 2 eggs
• 1 tsp vanilla
• 4 c flour
• 1/2 C cocoa powder
• 1 tbsp cooled coffee, brewed
• 3 tbsp espresso powder
• 1 tsp baking soda
• 1 tsp baking powder
• 1 bag of chocolate chips
• 1 bag of white chocolate chips
• 1 bag of chopped peppermint crunch baking chips

Instructions

1. Melt the butter and set aside. 
2. Mix in the sugars and stir until dissolved
3. Mix in the eggs, one at a time until fully mixed in
4. Mix in the coffee and vanilla
5. Stir in the flour, baking powder and baking soda
6. Mix in the chocolate chips and peppermint baking chips
7. Preheat the oven to 350 degrees
8. Take a small ice cream scoop and scoop dough onto the baking sheet
9. Bake for 8-10 minutes

Usually when I’m in the baking mood, I bake more than one thing. My mind usually explodes with ideas and if I already have the oven on and I’m in the mood too cook, why not do multiple recipes?
