Breakfast for Dinner: Homemade Banana Pancakes

Cooking for a family is a challenge. How do you meet the needs of your whole family while trying to make everybody happy?

I have the perfect solution – Breakfast for Dinner. It’s a nice change to your usual meals. One of the main reasons that I love Breakfast for Dinner is because I’m not a morning person so I usually have to skip breakfast. I’d much rather get my beauty sleep than wake up to eat. I know, bad habits die hard. One of my favorite and easiest breakfast for recipes is Homemade Banana Pancakes. If possible, I like to make everything homemade. It usually tastes way better than pre-made items and I actually know what is going into my food.  This recipe only consists of 9 items and you can have a whole meal done in 30 minutes from start to finish.

Homemade Banana Pancakes

First gather all of your ingredients. When cooking, I like to put all ingredients on the table and put them away once I’m done with them. That way, if I still have ingredients on the table when I think I’ve added everything, I know that I’ve missed something. I like to keep myself accountable.  Gather 1 cup Flour, 1 tablespoon sugar, 1 Teaspoon baking powder, 1/2 Teaspoon baking soda, Dash of Salt, 1 Cup Buttermilk, 1 Egg, 3 Tablespoons I Can’t Believe it’s Not Butter, and 1 banana.

In a large mixing bowl, stir together the flour, sugar, baking powder, baking soda and salt. Mix well.

Using a whisk, mix in the Buttermilk and egg until it’s well combined with the dry ingredients.

Pour in melted I Can’t Believe it’s Not Butter. At this time Chop your banana up into small slices. I used one banana for this batch of pancakes and it was plenty, but add as many as you would like to suit your taste.

Heat your non-stick skillet over medium heat. You don’t want the pan too hot because it will burn the pancakes as soon as they touch your skillet.

Pour your pancake batter onto the skillet using a 1/4 cup measuring cup. I added the bananas to the batter once they were on the skillet mainly so they were evenly dispersed. If you want, you can chop the bananas up and add them to the batter as an alternative.  When pancake is golden brown, flip to cook other side.

Top with syrup and I can’t believe it’s not Butter. I froze all leftovers so I can eat them anytime in the future.

Homemade Banana Pancakes Recipe

Ingredients:

  • 1 cup flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • dash of salt
  • 1 cup buttermilk
  • 1 egg
  • 3 tablespoons I can’t believe it’s not Butter!

Directions:

  1. In a large mixing bowl, stir together flour, sugar, baking powder, baking soda and salt. 
  2. Using a whisk, mix in the buttermilk and egg until mixture is smooth.
  3. Stir in melted I can’t believe it’s not Butter!
  4. Cut bananas into thin slices.
  5. Heat a non-stick skillet over medium heat.
  6. Using a 1/4 cup measure, pour pancake batter onto hot skillet.
  7. Add sliced bananas to batter on skillet.
  8. When pancake is golden brown, flip to other side.
  9. Top with syrup and I can’t believe it’s not Butter!

If the homemade banana pancakes won’t fill you up, you can always add some fresh fruit or some scrambled eggs to complete the meal. From start to finish, this meal took less than 30 minutes.     I definitely love pancakes and eggs sandwiches for dinner, and the boys certainly don't complain! Will be adding bananas and I can't believe it's not butter next time!
