The Best Queso Recipe Ever

Chips and Queso – it doesn’t get much better than that. Am I right or am I right?

I can eat Mexican food every single meal or every single day and never get tired of it. My husband thinks I’m absolutely crazy, but I sometimes question if he is a Texas or not. Since he won’t allow us to eat Mexican food every single night of the week like I would prefer, I have to make myself things like queso and homemade salsa to hold me over til I can get my fix.

I cook all the time and it still surprises me the amount of cooking techniques and kitchen tricks that I don’t know. I think a lot of it is because I get so stuck making the same entrees for dinner that it’s hard for my brain to be open when it comes to thinking in the kitchen.

I can’t tell you how many times I’ve craved queso but since I didn’t have a big ole slab of Velveeta cheese, I didn’t make any. Every single time I had shredded cheese but no velveeta so my mind told me, “nope, no queso tonight.” How silly is that? So I decided to made myself some queso with the mounds of shredded cheese I had in my refrigerator and OH MY GOSH, it was so good. I’m embarrassed that I’ve never made it this way. The Best Queso EverI poured approximately 2 cups of shredded cheese into a mixing bowl that was microwave safe and added a couple tablespoons of hot salsa. I microwaved the cheese in 30 second intervals. I’m not going to lie to you, when the cheese was in the melting process it didn’t look good. All I could think was “THIS IS WHY I NEVER MAKE QUESO” but the hotter the cheese got and once it was fully melted it went back to looking normal. I heated the cheese for approximately 3 minutes.

Once the cheese was completely melted, I added 1/2 pound of Johnsonville sausage and lots of Mezzetta jalapenos to give it an extra kick. The queso was absolutely amazing and I can’t wait to make it again for my game day party! Every homegating party has to have a large bowl of queso and I’m glad I found a recipe that is not only easy to make but that I can make with shredded cheese!
