Raise your hand if you can eat Mexican food every single day for the rest of you life.
Okay, I’m glad I’m not the only one. I find it crazy when I meet people who don’t love Mexican food like I do. My husband thinks I’m crazy and won’t eat it more than once or twice a week. I think he’s the crazy one.
One way that I get around eating it more than once a week is to find delicious recipes and make them for dinner. It’s hard for anyone to pass up a tasty meal when someone else is cooking it. One of my go to dinners is taco soup. It’s SO simple and is full of flavor not to mention it requires little to no prep. Thankfully, my husband really likes it so I make it as often as possible.
I’ve started keeping a list of great Mexican food recipes that I can refer to anytime I need a great recipe to make for dinner and thought I would share it with yall.
