Having easy snacks that I can grab and go in my refrigerator is so important to me. When healthy food isn’t accessible, I tend to grab all the sweets and foods that don’t agree with my body. I’ve been making a conscious effort to buy fresh produce and lots of whole foods to keep so I don’t feel the urge to snack on unnecessary items.
Eating fresh food is great but I get so bored with it over time. I like to mix and match food to make more flavorful items. The easiest way for me to do this is to make lots of easy dips or small salads that combine all of my favorite foods. I love Mexican Street Corn so I threw together all of the ingredients and made a simple dip that I can eat easily. This dip is great to eat with chips or even a spoon if you want to avoid chips. If you’re really hungry, throw this mixture into a tortilla and you’ve got a pretty hardy snack. We like to keep this dip stocked in our fridge, I feel like it tastes best once it’s chilled in the cold fridge for a few hours.
Mexican Street Corn Dip
Ingredients
- 2 cans of corn
- 2 cans of black beans
- 1 avocado, peeled and chopped
- 1 green bell pepper, chopped
- 1 tomato, chopped
- 1/2 half onion, chopped
Directions
- In a large mixing bowl, combine the corn, black beans, avocado, bell pepper, tomato and onion
- Set aside to make dressing
Dressing ingredients
- 1 C plain greek yogurt
- 1 tbsp lime juice
- 1/2 tsp honey
- 1/2 tsp cumin
- 1/2 tsp paprika
Directions
- In a medium bowl, combine all ingredients and mix with a whisk
- Combine dressing with the corn mixture and serve
